Cupcake Love

     One thing you will all quickly learn about me is how much I love baking. Specifically, how much I love CUPCAKES. They are the perfect size, can be decorated adorably, and are sinfully delicious!! My dream is to someday have a super cute cupcake shop where I can spend my days baking my favorite things. This, however, is still just a dream that will probably not be realized anytime in the near future. So, for now, I will continue playing professional baker in my own kitchen with my little ones at my feet. :)



     I wanted to share one of my favorite recipes that I made not to long ago. These are not-so-kid-friendly White Russian cupcakes. My step-father LOVES white russians, so I had to make them for him. If you have never had or heard of them, they consist of Kahlua, vodka, and cream.




I personally cut down the alcohol content on these a little bit just so I didn't feel so bad letting my son have a little taste when he was begging for them!!! They are quite wonderful though, I highly suggest you give them a try!


White Russian Cupcakes
cupcake recipe adapted from How to Eat a Cupcake, Buttercream recipe from Baked Perfection

makes 12 cupcakes

1 1/4 cups all purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup sugar
6 tablespoons butter, softened
1 large egg and 1 egg white
1 teaspoon vanilla extract
1/2 cup milk
1/8 cup Vodka
1/4 cup Kahlua, divided

Preheat oven to 350 degrees Fahrenheit. Line a cupcake pan with paper liners.

In a large bowl, mix together the flour, baking powder, and salt. Set aside. In a seperate bowl or in a stand mixer, beat together the sugar and butter until combined. Add egg and egg white, one at a time. Then add the vanilla, Vodka, and 1/8 cup of Kahlua. Gradually add the flour mixture in three additions, alternating with the milk in two additions, ending with the flour mixture.

Bake 17 -20 minutes, or until a toothpick inserted in the middle of a cupcakes comes out clean. While the cupcakes are still warm, brush the tops with the remaining 1/8 cup Kahlua. Remove from pan and cool completely on a wire rack before frosting.

Kahlua Buttercream
recipe from Baked Perfection

1 stick of butter, softened
3 cups powdered sugar
pinch of salt
3 - 4 tablespoons Kahlua

Beat butter until creamy. Add salt. Add powdered sugar 1 cup at a time, beating until combined. Add Kahlua 1 tablespoon at a time until you reach desired consistency.

Weekend Fun!


This past weekend (and week!) was a very busy one for my little family. On friday the boys and I went to visit one of my bff's to play and design this beautiful blog!!!

Little A loves her puppy, Harlee, even though she is a little big for him and very energetic! He enjoyed teasing her through the window for most of the day.



The hubby and I also accepted an offer on our adorable house after only 4 DAYS on the market!! It was crazy! We didn't expect to sell it for another year.

I will miss our house and all the wonderful memories we have here but it's time to move onto bigger & better things now that our family is growing!!


Saturday, the boys and I went to my hometown to visit family and got some much needed pampering. Hubby stayed home to get some needed improvements done. Have I mentioned yet how wonderfully handy he is? He has done a ton of work on this house including completely gutting & re-finishing our gorgeous basement (another thing that we'll be sad to leave behind).

The rest of saturday and all day sunday were spent house shopping so we aren't homeless when we have to move out of our current home. I was super excited that my mom was able to spend the day with us on sunday to help with picking a house and with the boys. Fortunately for us, we found one! And I LOVE it and am super excited to move in. It is on the other side of town from where we are now and it's exactly where we want to be. Just praying that everything else that is required for both houses goes smoothly, which I truly feel will because none of this would have worked out like it did if it wasn't meant to be.

Dear Blog Lovers:  Welcome and thank you for reading! I hope you keep following me as I share all my ups and downs as a stay at home momma! Im starting to blog at a very busy time in my family's life. We have a 6-week old, a 2 1/2 year old and we are selling our house!!!


Dear House:  I can't believe you sold in less then a week!!! Now crossing fingers that you pass inspection so we can move out and into a beautiful new home.


Dear Hubby:  Thank you for being so wonderful and working so hard so I can be a stay at home momma to our 2 beautiful boys. Our first year of marriage has been crazy but so much fun and I couldn't imagine spending the rest of forever without you.


Dear Little A & Little C:  Im so very blessed to have 2 perfect little boys. Please be good for mommy for the next month while we pack and move.


Dear Future Me:  This is your first of hopefully many blog posts and I hope you are still loving blogging in a year. I look forward to seeing what is going on in our life and where the blog world will take you.
